Garlic Shrimp with Roasted Red Peppers

Ingredients

3 Tbs Olive Oil
10 each Garlic Cloves, Thinly Sliced
20 each Raw 16/20 Shrimp, Peeled & Deveined
16 oz Jarred Roasted Red Bell Peppers, Cut into Strips
1 Tsp Smoked Paprika
½ C White Wine
3 Tbs Parsley, Chopped
TT Kosher Salt & Black Pepper

Procedure

Thinly slice the garlic cloves and cut the roasted red bell peppers into strips. Pat the shrimp dry with paper towels and season with Kosher salt and black pepper.

In a large sauté pan over medium heat add the 3 tablespoons of olive oil. Wait for the oil to start to shimmer.

Add the sliced garlic to the pan and after about 30 seconds and the garlic is fragrant, add the shrimp and cook for 1-2 minutes and then remove the shrimp from the pan and set aside.

Immediately add the roasted red bell pepper strips and the smoked paprika into the pan with the garlic, quickly mix together and then add the 1/2 cup white wine and season with the Kosher salt and black pepper. Simmer for about 2 minutes, then add the shrimp back into the pan and 2 tablespoons of chopped parsley, mix together and remove the pan from the heat

Place shrimp and peppers into a serving platter and sprinkle with more chopped parsley and serve at once.
