Salad
1 Lb Cherry Tomatoes, Halved
1 Lb Cucumber, Seedless, Half Moons
¼ Lb Red Onion, Thinly Sliced, Rinsed & Drained
½ Lb Green Bell Pepper, Seeds & Ribs Removed, ½” Dice
¾ C Kalamata Olives, Chopped
4 oz Feta Cheese, Crumbled
1 medium avocado (not too soft), diced
Greek Dressing
½ C Olive Oil
1 ½ Tbs Lemon Juice, Fresh
1 Tbs Red Wine Vinegar
½ oz Garlic, Minced
1 ½ Tbs Parsley, Fresh, Chopped
1 Tsp Oregano, Dried
¾ Tsp Honey
TT Kosher Salt & Black Pepper
– In a large mixing bowl, combine all of the salad ingredients.
– In a separate mixing bowl, combine all of the dressing ingredients and whisk together. Refrigerate until ready to use.
– Just before serving, pour the dressing over the salad and gently toss to combine.
– Season with Kosher salt and black pepper if needed.
